Tip

  • Don’t cut the tenderloin too thick as it is the part with the least fat, and it may take time for the pork to be cooked.
  • When marinating, the pork will gradually absorb the sauce as it gets marinated. If the sauce starts to disapper, it means the pork is well marinated.
  • The pork could be kept at 1-5°C for 2 days after marinated. Keep the pork in the freezer if you want to keep it longer.
  • If you want to to keep the Jaew sauce longer, seal it into a container and keep it at 1-5 °C. With this, the sauce is able to kept for 3 days. Also, do not immediately add the chopped culantro into the sauce that is intended to be kept, as the color of the culantro might turns brown and looks unappetizing. Jaew sauce should not be kept for longer than 3 days, as roasted rice will swell up and look unappetizing.
